Recipe Ingredients:
- 1 head of cauliflower
- ½ cup sweet onion, minced
- ¼ cup chives, thinly sliced
- ½ cup breadcrumbs (gluten free alternatives will also work)
- ½ cup grated cheddar cheese (or try other similar style cheeses)
- ½ cup grated parmesan cheese
- 1 egg
- Pinch of salt
- 1-2 tbsp olive oil
Recipe Instructions:
Prep & Cook:
- Cut cauliflower into medium sized chunks, then steam in water until slightly tender
- Drain off water and put cauliflower in a bowl then mash with a fork or a potato masher
- Stir in onions
- Add in breadcrumbs and stir well
- Add in cheddar cheese, mix well, then fold in the parmesan cheese
- Put the egg in a small bowl, add pinch of salt to the egg, mix well and add to mixture
- Line cookie sheet with parchment paper
- Shape mixture into 1” balls and place onto parchment paper
- Brush the balls with olive oil and cook for 10- 15 mins or until golden in color
- Makes 12-24 cheesy balls depending on the size of the balls. Serve with a tomato based dipping sauce.
