Recipe Ingredients:

  • 2 Tbsp extra virgin olive oil
  • 2 medium size carrots, chopped
  • 2 stalks celery chopped
  • 1 medium size onion, chopped
  • 1 medium size red bell pepper, chopped with seeds removed
  • 2 cloves garlic, minced
  • 1 1⁄2 tsp Italian seasoning or other strong spice blend
  • 1⁄2 tsp ground pepper
  • 1⁄4 tsp salt
  • 8 cups low-sodium vegetable broth
  • 1 medium head green cabbage, sliced into bite-sized pieces
  • 3 Roma tomatoes diced
  • 2 tsp white wine vinegar

Recipe Instructions:

Cook:

In large pot heat oil over medium heat. Add onion, celery, and carrots. Cook until the vegetables begin to soften, 6-8 minutes, stir often

Add bell pepper, garlic, Italian seasoning, pepper, and salt. Cook for 2 minutes, stir often to avoid burning

Add broth, cabbage and tomatoes. Increase heat to medium-high and bring to a boil

Reduce heat to simmer, cover the pot. Cook until vegetables are tender, 15-20 minutes

Notes:

makes approximately 2 cups. May exchange red bell pepper for yellow or orange or use a mixture. Heirloom tomatoes are a great substitution for the Roma tomatoes. If you like a little spice add in hot pepper spice or curry to taste. Start with 1⁄4 tsp and add more to reach your heat tolerance.
