Recipe Ingredients:
- 1 cup of cooked quinoa
- ½ cup hummus, try different flavors
- 1 cup salad greens your choice, mixed greens, romaine, kale, other
- ½ cup sliced cooked beets
- ½ cup shelled edamame
- ½ medium or large avocado
- ¼ cup nuts or seeds, sunflower or pumpkin seeds, sliced almonds, chopped walnuts, other
- Salad dressing of your choice, optional
Recipe Instructions:
Prep:
- In a sealable lunch container line with salad greens
- In sections add hummus, avocado, quinoa, beets, edamame, and nuts/seeds
- Put salad dressing serving in small container to be added to bowl at meal time if desired
- Easily prepared the night before and will last for up to 2 days.
Notes- you can add or substitute ingredients. Consider olives, tomatoes, hard-boiled eggs, chicken, shredded carrots, berries, chopped cabbage, and peppers. Get creative.
